Mom’s Zucchini Bread Recipe

This is the zucchini bread recipe we grew up with! The trick is blending the zucchini with the wet ingredients for a smooth batter that creates a perfectly moist zucchini bread.

Zucchini Bread Ingredients

Eggs Eggs act as a binder in this quick bread recipe. They also contain nutrients like protein and micronutrients like choline, lutein and zeaxanthin.

Neutral cooking oil I prefer to use avocado oil as a the oil in this recipe. It makes the zucchini bread incredibly moist and soft.

Zucchini This is the star ingredient of this recipe! Zucchini is high in water and full of vitamin A, fiber, manganese, vitamin C, and magnesium (as well as many other nutrients).

Vanilla extract Vanilla extract brings all the flavors of this bread together and adds a nice warmth.

Sugar Sugar is the sweetener in this bread.

Flour 

Cinnamon Cinnamon blends well with the vanilla and sugar giving this bread lots of sweet flavor. It’s also combined with chopped nuts to make a wonderful topping on this bread.

Salt, baking soda, baking powder

Walnuts Walnuts are associated with brain health and heart health. They add a nice crunch to the topping of this zucchini bread.

How to Make Zucchini Bread

The trick to this method is to put the eggs, oil, zucchini and vanilla in a blender and blend until very smooth. Then, mix the wet ingredients with the dry ingredients, pour into a loaf pan, top with the walnut topping and bake! Putting the zucchini in the blender makes it much easier to work with than other recipes that require grating the zucchini.

Tips for Making Zucchini Bread

You can easily omit the topping (walnuts, cinnamon and sugar) and the recipe still tastes amazing! If you need a gluten free option, feel free to substitute a gluten free flour in place of the traditional flour the recipe calls for. It should turn out great!

Description

Zucchini bread is a summer tradition we look forward to every year. We have been making it with my mom’s delicious recipe for as long as I can remember!


Ingredients

Scale

3 eggs

1 cup neutral cooking oil (such as avocado oil)

23 cups roughly chopped zucchini

1 teaspoon vanilla extract

2 1/2 cups sugar

3 cups flour

2 teaspoons cinnamon

1 teaspoon salt

1 teaspoon baking soda

1 1/2 teaspoons baking powder

For the topping: 

1 cup chopped nuts (walnuts or pecans)

2 teaspoons sugar

2 teaspoons cinnamon


Instructions

Preheat oven to 350 degrees Fahrenheit. Grease two loaf pans and set to the side.

In a blender, combine the eggs, oil, zucchini and vanilla. Blend until smooth.

In a large bowl whisk together the sugar, flour, cinnamon, salt, baking soda, and baking powder. Add the zucchini mixture to the dry ingredients and mix until combined.

Pour into two greased loaf pans and bake for 1 hour, or until a toothpick inserted comes out clean.
