Yesterday kind of felt like my Friday because Brian and I have friends visiting from Indianapolis for the weekend. I was able to spend the day with them exploring our little neighborhood and the 16th Street Mall in Downtown Denver. It was so fun to play tourist 🙂
Today, they will be spending the day with Brian in Boulder, CO while I get caught up on some school work, blog work, singing work and anything else I want to do before the weekend comes around.
Tomorrow, we will be in the mountains once again (yay!!) in Estes Park and then we are having friends over for a “Fall Dinner.” I couldn’t be more excited about what we have planned!
Five Things I Ate:
A delicious Brussels Sprouts Salad (recipe coming soon!)
A homemade cupcake. It was Amanda’s birthday the night we picked them up from the airport, so I HAD to have a treat waiting for her 🙂
Pumpkin Egg White Oats. Some of you requested a recipe for this, so I made it a few times this week, wrote down my method and took pictures. This will be coming your way soon too!
Running! And listening to my music as I prepare to sing with the Holiday Party Singers this holiday season 🙂
Five Things Making Me Happy:
Having Amanda and Mark visit! Mark and Brian were in dental school together and Amanda is his awesome wife. It’s so fun playing hostess and tour guide and having fun awesome people stay with us.
The skinnytaste cookbook!! Amanda is a HUGE health nut, food lover, and kitchen experimenter just like me and she got me the skinnytaste cookbook as a thank you gift for having them stay with us. I seriously want to make JUST about everything in it!! 🙂 Gina paired up with a Registered Dietitian while preparing the cookbook, so there is a TON of nutritional information in it, tips for prepping meals for the week, and BEAUTIFUL photos. It’s awesome!
Going to the mountains tomorrow. I know we were there just last weekend, but I seriously LOVE going and being active all day on Saturdays 🙂
My sister just told me she is going to come and visit between Thanksgiving and Christmas and I can’t believe it! I’m super pumped.
Fall weather, fall food, and fall clothes…it’s officially fall and I’m loving everything about it.
HEY! So, I’m on the hunt for “healthified” Thanksgiving dishes and I would love your help. Please e-mail or comment with a link or the recipe of a favorite healthy Thanksgiving dish that you have tried 🙂 I’ll be featuring these recipes in a roundup closer to the holiday. Thanks!

Have a great time this weekend! I loved Estes Park when I went. If you can, carve out some time to walk around Estes itself. So cute!
Such a cute little town!! 🙂
