While I was planning on being super cheery and chipper this morning after a fantastic night out with Brian’s family last night to hear and see Michelle Obama speak – I have to be honest in saying I’m a little anxious and shaken up right now.
Rooney, our younger 1 year old vizsla, gave us a bit of a scare this morning. I will spare you the details, but she is acting like herself now and she is at the vet with Brian. Hoping everything comes back ok and it was just a strange fluke, but until then I know I’m going to feel a bit off.
So, even though things are a little out of the ordinary this morning I wanted to share this Strawberry Chia Jam recipe with you 🙂
It’s EXTREMELY simple to make, contains just two ingredients, zero added sugar, and is perfect anyplace you would use traditional jam.
Some of you may be wondering why I made this jam rather than just using a version from the store (which I do on occasion!). I don’t LOVE the fact that the version at the store contains added sugars, but I do LOVE that this homemade chia version has added fiber from the chia 🙂
The strawberries are simply pureed, so they are a great source of fiber too!
Fiber is great for regulating your digestive system, helping you feel full and satisfied until your next meal time, may lower cholesterol, and helps to regulate blood sugar levels…but aside from all that, this Strawberry Chia Jam tastes great and is super simple to make!
I prefer to use frozen strawberries (or any other berry you want to use in this recipe) because they are in season all year. Simply set the frozen strawberries on the counter for about two hours to thaw or you can thaw them in the microwave.
