This twist on a classic is a fun way to eat sweet potatoes at the start of the day – sweet potato toast! Top it with sweet or savory toppings and enjoy!
This Sweet Potato Toast is super tasty (all about the toppings!) and so easy to make ahead of time! I’ve made a batch on the weekends to enjoy during the week, or made them for a crowd so that all guests have to do is pop in the toaster once to reheat!
Initially I tried making the toast solely in the toaster, but it was a very hands on process that had me sitting near the toaster and constantly checking then retoasting the sweet potato slabs until the consistency was just right. With the oven method (recipe below), I can pop the uncooked sweet potato toast in the oven and get the rest of breakfast ready, finish prepping for the week, or do literally anything else. LOVE being able to multi-task 😉

I’m in such a spot of limbo right now. Many people in my program have completed their dietetic internship, and I am still in my program through July (which I realize will be here like tomorrow!). I’ve been working to complete my dietetic internship for about 8 months now and I’m feeling like I hit the wall in the marathon. The finish line is near, I’m not ready or willing to throw in the towel, but I need a little external motivation. I’m just chomping at the bit as I wait for the time when I am done with my internship and ready to pass my exam. Have you ever been in a situation like that?
Last week, Brian and I spent a few days visiting an orthodontic’s office Florida, and I honestly feel like it was just the external motivation I needed. The staff was extremely welcoming, the practice had many systems in place, and they were very encouraging in every way possible. Brian and I both came home buzzing with energy!
Now that we are recharged and ready to tackle all.the.things I had to write and share this Sweet Potato Toast and a fun new project with you!

I mentioned that I tried making this toast in the oven, but it proved to be a pretty hands-on project. I prefer to make the Sweet Potato Toast ahead of time in the oven, then pop it in the toaster to reheat!
After the sweet potato toast is reheated…top with your fav toppings! This recipe is great for serving to a crowd because you can easily customize the toppings to fit your tastes, dietary needs, etc.
Some of my fav toppings are strawberry chia jam and nut butter, almond butter with banana and a sprinkle of chia or hemp seeds, or avocado with cherry tomatoes and a balsamic drizzle. DELISH!

It’s so great! You can absolutely make it in the toaster (just pop it in about 4 times or until tender in the center) but I love the hands free/make-ahead oven version 🙂
