Happy Monday, friends!
How was your weekend?
Ours was great, as it was one of the last “free” weekends we have before we move to Colorado so we made sure to make the most of it.
First Friday Food Truck Festival:
Even though we were at the food truck festival and everything looked UH-MAZING, I was really craving some salad bar from the brand new Marsh grocery store they put in downtown. Β So good π
9 mile run on Saturday morning. Β This is the longest I have run since the Mini Marathon and I felt great during and after!
Brian’s childhood friend, Ben, became a priest on Saturday π

Sunday afternoon hike at Fort Benjamin Harrison aka Fort Ben.
Followed by a yummy picnic lunch.
Here is a look at what we have planned for meals and fitness this week:
Meals: (this week, we went grocery shopping on Thursday so I will start the week there!)
Friday–Marsh salad bar
Saturday–Out for Ben’s first mass
Sunday–Burrito Bowls with shrimp (these were so good and so easy!)
My bowl: Β Cauliflower rice, romaine, roasted zucchini and bell pepper, sweet potato, black beans, onion, tomato, homemade guacamole, salsa, and shrimp.
Brian’s bowl: Β black quinoa, cheese, tortilla chips, black beans, sweet potato, romaine, roasted zucchini and green pepper, onion, tomato, guacamole, salsa, and shrimp.
Monday–Brian will make a homemade mini pizza at home, and I will snack at work (it’s my late night)
Tuesday–Dinner salad
Wednesday–Lettuce wraps
Thursday–on the road, we are headed to Fort Wayne for a friend’s wedding!
Friday–wedding-out
Saturday–wedding-out

On the agenda this week is to pack up winter stuff and take to my parents in pre move preparations since I can do that now before the babies arrive!!! I’m hoping to get a lot of other ‘non everyday use’ stuff up too!

Looks like you had a fun weekend! I haven’t gone hiking much these past couple years but would really like to start doing it again since there are so many beautiful hiking trails in the northwest!
This was really our first “hike” together like that and it was a blast! Definitely get back into it if you can π So fun!
O can not wait for the recipe! I have been looking everywhere for Bob’s GF Scottish Oats!
