This morning I slept in a little bit because I was up late last night picking Brian up! He has been in Colorado for the past two weeks as a staff member on a trip that his high school takes every summer. It sure feels good to have him back!
My workout this morning was the “Max Interval Circuit” in the Insanity workout series, and boy was I sweatin’ by the end! It felt great! But sometimes I do feel a little “insane” while I am sweating my booty off!
After Insanity, I got right in the shower, which sometimes right after a sweaty workout isn’t that great of an idea. I got out of the shower and I still felt like I was sweating! Then I blew my hair dry….and I was still sweating! So, for breakfast I decided to have something to cool me off…A SMOOTHIE! Honestly, I have a smoothie probably about every morning 🙂 I just love them so much!
In today’s breakfast shake I put:
1/2 Frozen Banana
1/2 Cup Frozen Blackberries
1/2 Cup Unsweetened Almond Breeze
1 Handful of Spinach
1 Tbs of Crunchy Peanut Butter
A Pinch of Xanthum Gum
A Splash of Vanilla Extract
2 Packets of Splenda
3 Ice Cubes and a little water for volume
Now, you are probably thinking…”WHAT!? SPINACH?!” but you CANNOT taste it! I know…it’s insane! Xanthum gum is a gluten free thickener and natural carbohydrate that makes the smoothie a little bit thicker and creamier rather than icy, which is how I prefer my smoothies. I have been making smoothies for breakfast forever! But I have taken a few tricks like the spinach and xanthum gum from Julie.
Now, when it comes to vanilla extract my family does not use just any vanilla. No, we get ours in liter bottles from Mexico!!! It’s hard to explain, but once you try it you will know the difference. My grandparents LOVE to travel, so whenever they go down South they pick up a couple of bottles! Gotta have our vanilla fix…
