Cherry Coconut Bars are something my family makes every holiday season. My Great Grandmother taught me the recipe when I was young and it’s still one of my favorite Christmas cookies to enjoy this time of year!

Description

Cherry Coconut Bars are something my family makes every holiday season. My Great Grandmother taught me the recipe when I was young and it’s still one of my favorite Christmas cookies to enjoy this time of year!


Ingredients

Scale

1 cup flour

½ cup butter, softened

3 tablespoons powdered sugar

2 eggs slightly beaten

1 cup sugar

¼ cup flour

½ teaspoon baking powder

¼ teaspoon salt

1 teaspoon vanilla extract

¾ cup chopped walnuts

½ cup shredded, sweetened coconut

½ cup quartered maraschino cherries


Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large bow, mix 1 cup flour, ½ cup softened butter, and 3 tablespoons powdered sugar with hands to create a dough.
  3. Spread the dough into the bottom of an 8×8 baking dish into a smooth, flat layer.
  4. Bake for about 25 minutes, or until golden brown.
  5. While the crust is baking, combine the eggs, sugar, flour, baking powder, salt, vanilla, walnuts, coconut and cherries and mix thoroughly.
  6. Spread the cherry coconut mixture over the top of the baked pastry.
  7. Bake for about 25 minutes. Allow to cool completely and cut into small squares.
