Description
Cherry Coconut Bars are something my family makes every holiday season. My Great Grandmother taught me the recipe when I was young and it’s still one of my favorite Christmas cookies to enjoy this time of year!
Ingredients
1 cup flour
½ cup butter, softened
3 tablespoons powdered sugar
2 eggs slightly beaten
1 cup sugar
¼ cup flour
½ teaspoon baking powder
¼ teaspoon salt
1 teaspoon vanilla extract
¾ cup chopped walnuts
½ cup shredded, sweetened coconut
½ cup quartered maraschino cherries
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a large bow, mix 1 cup flour, ½ cup softened butter, and 3 tablespoons powdered sugar with hands to create a dough.
- Spread the dough into the bottom of an 8×8 baking dish into a smooth, flat layer.
- Bake for about 25 minutes, or until golden brown.
- While the crust is baking, combine the eggs, sugar, flour, baking powder, salt, vanilla, walnuts, coconut and cherries and mix thoroughly.
- Spread the cherry coconut mixture over the top of the baked pastry.
- Bake for about 25 minutes. Allow to cool completely and cut into small squares.
