Smoothies are Back

I finally had a smoothie for breakfast again!  I didn’t realize how much I missed them until I made one for breakfast this morning (the coffee kind).

Oh smoothie, how I missed you!

For some reason, there is just nothing better than a cool, creamy, delicious smoothie for breakfast 😉

Zucchini Overload

A couple of days ago I made a batch of my mom’s amazing zucchini bread.

Well, her recipe makes two loaves and each loaf has 16 slices, which equals a lot of bread.  Since I will be gone for a considerable amount of time, in addition to teaching Brian how to cook a meal or two I recently decided that it would be a good idea to freeze some meals in individual portions that he could just heat up.  I thought that freezing one of these loaves of zucchini bread would be perfect for him to have as breakfast food while I am away.

I wasn’t quite sure how to go about properly freezing the bread, so I gave my mom a call because for some reasons mom’s just know everything and sure enough she had the perfect solution.  Her idea was to put a couple of slices of bread in a baggie, close it most of the way, stick a straw in the baggie, and suck out the remaining air!  What a genius idea, it’s just like those air tight freezer packs.

Now, all Brian has to do is take a baggie out the night before he wants to eat it and Voila!  Breakfast is served 🙂

Workout

Tonight I teach my spinning class, and will do some strength training afterwards.  When I woke up today I realized that my hamstrings are soooo tight because I didn’t do that great of a job stretching after my run yesterday because I was preoccupied with trying to get into my apartment.  Does anyone have any good hamstring stretches they would like to share?
