Happy Friday friends!
As we wrap up the first week of December, I thought I would share my thoughts with you about my November Breakfast Challenge.
The “challenge” was to eat a different breakfast every single day throughout the month of November…sounds easy enough, right?
Well, believe it or not it is harder to do than you think! I am a creature of habit, and I LOVE my oats and smoothie breakfasts so this challenge really had me stepping outside of my comfort zone to plan my breakfasts ahead of time and try different morning meals than usual.
It also made me very aware of what I was eating, what I was choosing to eat, and what I was craving. I really realized that while I did have a couple of savory egg breakfasts the big majority of my morning meals were filled with sweet meals of oats, Greek yogurt, muffins, and smoothies.
Here is a look at some of my final breakfasts:
Chia pudding with Greek yogurt and peanut butter (inspired by Meg herself!)
Overnight oats in a peanut butter jar with chopped pear
Cherry Strawberry Smoothie
Pumpkin Spinach Smoothie
Pumpkin Gingerbread Smoothie from Eating Bird Food (so good!!!)
Pumpkin Cranberry Egg White Oats
While I did completely enjoy and love the challenge of eating something different every day, I must admit that since it is December I have been thoroughly enjoying pumpkin overnight oats almost every day. 🙂
