I hope you all had a great week!! I think some schools are back in session already? If so, happy first week/day of school!
For me, this week was pretty much consumed with Organic Chemistry (what’s new?), but I did manage to get some dog park time in with little Bernie.
Tomorrow, I am running the Georgetown Idaho Springs half marathon with Marisa, and I’ve gotta be honest…I’m a little nervous! I’ve been making sure to get some extra rest, take it easy this week with workouts, and drink lots of water, but I’m still on the nervous side of things. I think it’s because I am unfamiliar with the area and running at a slightly higher altitude. I know that it will all be ok and lots of fun, but I’m still a little anxious!
Alright friends, I hope you have a fantastic weekend! Now for some Five Things Friday…
Five Things I Ate:
This salad…holy yum! Arugula and spinach tossed with walnut oil and white balsamic vinegar, topped with roasted heirloom carrots, tomato, and baked salmon. Super easy and really tasty.
Asian Chicken Lettuce Wraps in salad form. I just topped a bed of romaine with the “filling” rather than wrapping it up in lettuce leaves and it was super tasty. I also used coconut aminos in place of the tamari to keep the meal soy free. The coconut aminos were really great! (Brian couldn’t even tell the difference).
I baked some cod with low FODMAP taco seasoning and served it on top of some romaine with a new strawberry salsa (recipe coming soon!!) and roasted sweet potatoes on the side.
Saturday I experimented with a yummy pesto potato salad recipe and used the leftover potato salad as a scrambled egg mix in. Really tasty! (recipe for that potato salad coming soon too!)
I also enjoyed a couple of bowls of banana soft serve this week 🙂 My sweet tooth has been RAGING..(it’s that time of the month…) so trying to tame it while keeping things healthy and tummy friendly!
I’m feeling pretty good this week. Just making sure to rest up, stretch a bit extra, drink extra water, and eat when I feel hungry in preparation for tomorrow’s half marathon!
Another thing I want to mention is that I started reading Marathon by Jeff Galloway.
His advice for marathon training is the run walk method…for everyone at any pace! While it sounds a little crazy, I am going to give it a try tomorrow. My plan is to run 4 minutes and walk 1 minute for the entire race. I’ll let you know how it goes!!
Has anyone out there tried the Jeff Galloway run/walk method?
Five Things Making Me Happy:
Only a few more weeks left in Organic Chemistry…seriously the end cannot come soon enough.
My monthly Love Grown Love Drop!!! 🙂 I LOVE getting these packages in the mail! Thank you love grown!!!!
My stomach has been feeling relatively good this week (thank goodness!!). Don’t want to run a half marathon with an uncomfortable tummy.
Friends…I’ve mentioned it before but I seriously LOVE that I have gone back to the beginning to watch each episode. I also love that one episode is ONLY 22 minutes. Perfect!
I have some super tasty recipes to share with you and a fun workout…pictures are taken, I just need to find a spare moment to write the actual post 🙂 But I can’t wait to share them all with you!
Good luck tomorrow! I used the Galloway Method for my first marathon. I saw a girl use it when I ran my first half and I remember being so frustrated because she kept passing me and finally blew past me. I did not catch up to her again. I found the pace ( I did 4/1 split) to be really effective and recovery was great. Running purists frown on the run/walk, but I like it.
Good luck tomorrow! That dog park looks so fun! My dogs would be filthy if I took them there. They like to find the wet spots at the dog park and roll around in the mud! Haha Bernie looks like he’s a little more conscious of his cleanliness, you’re lucky!
I’ve not followed Galloway’s method specifically (although I have a friend who has completed several using his method, and she finishes with a 10 min/mi avg), but when I trained for my first full last year, all of the programs I looked at encouraged taking breaks to walk. We use our muscles differently for walking than running, and this helps to keep our legs “fresher” longer (although at about mile 20, I wasn’t sure there was anything fresh about any part of my being). Have a great race tomorrow!
Potato salad with eggs sounds delicious! I need to try that one day.
I started with the running room method of 10:1 for half marathons. I’ve reduced the walk time a bit, but did walk/run for all 3 of my marathons and found it worked well for me.
O Chem was my demise. The amount of time/energy I put into was unreal. Those labs! Ugh. Still, it brings us a step closer to our goals, so hang in there!
Good luck at your half marathon! I’m sure you’re going to do a great job, and it’s a great way to test your fitness for the full! Enjoy Friends..it’s such a great series and I’m sad that I finished it already!

That salmon salads looks to die for! And I’m a little late to reading blog posts since I’ve been away, but congrats on finishing your half marathon!
Thanks, Sara!

Thanks, Mary!! 🙂 So glad to hear someone else who tried and liked the run walk method 🙂
All of the meals you’ve eaten this week look fantastic. I need to get more creative with cooking.
Thanks, Angela!! 🙂

The dog park is AMAZING!! Luckily Bernie has short hair, so even if he rolls around, baths are quick and easy because he dries so fast!
