This week has kind of felt like a whirlwind because I feel like I was trying to fit 5 days of work into 3 days so that I could work longer hours yesterday and most importantly because my mom is coming to visit…TODAY!
I can’t believe that we have been living here for over two months now. Β Crazy. Β But I think it’s the perfect time for Mom to come check things out.

Five Things I Ate:
I roasted my first acorn squash of the season! Β SO yummy π
I filled it with a little quinoa, organic chicken, black beans, cumin, salt, pepper, and garlic and I enjoyed every bite!! Served with roasted veggies on the side π
This amazing lunch salad of greens, beets, celery, carrot, organic chicken, leftover roasted vegetables, avocado, and microgreens all topped with a dijon and vinegar mixture. Β I want another π
A new recipe I just perfected…Butternut Squash Vegetarian Chili. Β It’s so good and I can’t wait to share the recipe with you!
Sweet potato soup. Β Seriously the easiest thing ever! Just sweet potatoes, vegetable broth, and almond milk with a little chipotle, salt, and pepper π So fally tasting!

Five Things Making Me Happy:
My mom being in town! I am SO excited π
Being done with my midterm! Seriously, it feels like a weight lifted off my shoulders.
Our first rehearsal for Holiday Party Singers is this coming Monday, so in my spare time when I’m not studying, creating a workout, cooking, or hanging out with Brian I have holiday tunes on the brain.
Kitchen success! Β I feel like recently I’ve had a lot of success in the kitchen, which is always a good feeling. Β I’m loving the new season and palette of ingredients I can work with, so I’m just kind of going with it!
Halloween! I was kind of worried Brian and I wouldn’t have any plans, but he just told me that we are invited to a friend’s Halloween party…now we kind of need to scramble for costume ideas! Β Suggestions anyone!?
