Hello and happy Monday AND happy St. Patrick’s Day!
Friday night, Brian and I spent the evening packing up our bags because EARLY Saturday morning, we loaded up our car to head down to Pensacola, Florida with a group of friends for a little spring break action.
We drove through the day, stopping almost every 3 hours for bathroom breaks (usually because I was the one that had to go!) and we made it to the condo by dinner time.
That is the LARGEST Reese’s egg I’ve ever seen…
Once we arrived in Florida, the first thing we did was admire the view from the balcony…gorgeous!
After unloading and soaking in the fact that we were actually in Florida we decided we should probably eat dinner then hit the grocery store.
Dinner was at a cute little restaurant called the Sunset Grille.
The entire restaurant was a cute, beachy, vacation theme which I loved! The wait staff was friendly and welcoming and everyone enjoyed their seafood dishes and drinks.
My meal was the house salad topped with grilled mahi mahi…so tasty!
After dinner, we hit up the grocery for some staples…I promise, there is food hiding behind all of that beer…
And after our fridge and cupboards were loaded, we decided to make a couple of cocktails 🙂
Yesterday morning, I woke up around 6:30am feeling great. So, after a bit of playing around on the computer and reading blogs I decided to hit the gym.
Initially, I wanted to go for a run outside, but it was VERY rainy and windy…so I created a little elliptical workout circuit-style to incorporate some strength training while getting my heart rate up.
The workout starts out with a 10 minute elliptical warm-up, then has you hopping off of the elliptical every 5 minutes to complete some strength training moves. I often find myself getting bored on the elliptical, but NOT with this workout…hopping on and hopping off the elliptical was the perfect way to keep my mind occupied and make the workout breeze by.
After my sweat session, it was time to make some breakfast…it was much needed because I was STARVING by this point.
When we were at the grocery, I made a point to purchase avocados, but I found two different kinds while I was there. The top avocado was significantly larger than what I had ever seen before and much more green.
The big, green avocado is from the Dominican Republic and the smaller dark (normal to me) avocado is from Mexico. Ever seen an avocado like this before?
I was anxious to try out this GIANT avocado and put it on top of my sweet potato breakfast scramble. Honestly, it tasted just like the regular avocado…I think I just got more for my money 🙂
On the side I had a delicious blend of fruit that I topped with some Artisana Raw Cashew Butter. Typically, I make my own cashew butter, but WOAH! This stuff was so good and much creamier than I could ever get my own version. I think I may be picking up more of these packets in the very near future 🙂
After lounging around and hanging out for most of the day, we decided we were all in the mood for a bloody mary bar.
Cassie, our resident bartender got to work in the kitchen.
We each added our own twist to our tasty drinks.
That would be me shakin’ up my bloody mary.
We had toppings like olives, habanero garlic cloves, green onions, celery, pepperoncini, and even bacon!
Yum!
And eventually, we decided it was time for dinner…so we ordered a bunch of pizzas and I made a salad because I just wasn’t feeling the pizza vibe.
Beth, our pizza connoisseur, was very pleased with this decision 🙂 She even has a pizza blog!!
So far, I’d say our spring break vacation has been a success.
Can’t wait to see what is in store for the rest of the week!

I’m on spring break too, but stuck in Ohio. I’ll make the most of it with a pamper night to myself at a b&b close to me later this week though 🙂 Have a great vacation!

I usually see those large green avocados sold as “Florida Avocados”. To me they taste not quite as rich as the small brown Haas avocado. But I still like them. And when cut open, they don’t seem to brown as quickly as the Haas if you’re saving some leftovers in the fridge.
