Hi Friends!
I hope your last weekend of September was amazing…crazy that October is practically here, right?
Brian and I had a really wonderful weekend that started out with a date night in!
We walked around a cute area not to far from our house called Cherry Creek. This area has tons of cute shops and restaurants, so there is always a lot to look at.
After walking around, we ordered some takeout and watched a few episodes of our latest Netflix obsession…The Killing. So good!
I enjoyed steamed brown rice and steamed veggies. Sounds pretty boring, I know, but it was so delicious 🙂 I just topped it with a little Braggs Liquid Aminos and was a happy girl.
Saturday morning we woke up super early and hit the road to Vail, CO so we could see the BEAUTIFUL aspen trees. Seriously, this was amazing and I’ll be writing up a full recap of the hike later in the week. If you’re here in Colorado in September seeing the aspen trees is a MUST do 🙂
After hiking we did a little Mexican dinner with some homemade margaritas while watching the Notre Dame football game.
And after football we headed downtown to check out the Denver Oktoberfest.
Sunday morning, I got up early and made a yummy batch of these Peanut Butter and Banana Muffins from Peanut Butter Runner before church.
Brian snagged one before I could even snap a pic…they were that good! 😉
After church, we did our weekly grocery shopping but made a pitstop at Bath and Body Works before for a little fall candle purchase.
Leaves and Sweater Weather…fall perfection if you ask me 🙂
We also put up some fall decor to get in the spirit. After all, it is October this week!
Roasted up some Brussels for dinner and put them into an amazing salad.
The salad was so good, but unfortunately didn’t photograph too well because it was a little dark outside. I promise I’ll share the recipe sometime soon…just gotta take some pics!
We enjoyed the Brussels alongside a piece of Sizzlefish salmon topped with this cinnamon seasoning. SO fall and so perfect!
