After unpacking from dog-sitting this past week, it was 6pm and Brain informed me that he was a liiiittle hungry. I still wasn’t ready for an entire meal after all of the cake that I ate at the bridal show, so I wanted to whip up something really quick and nutritious. Sunday Night Prep
Sunday nights are the night that I use to prepare for the week ahead. I chop vegetables, freeze bananas, and do whatever I can to make things smooth for the week ahead.
Tonight, I made my first homemade hummus…well kind of my first attempt. I actually tried to make it at home a couple of years ago with my mom’s blender…and I broke the blender. I guess that’s why they invented the food processor!

I then made homemade banana bread “larabars.” These will be great to have on hand for quick breakfasts or snacks needed in a pinch. These were so simple to make and tasted just like the real thing.
Homemade Banana Bread “Larabar” (Tarabar!)
I began by dehydrating 2 bananas in the oven at 200 degrees for 2-3 hours (or until dry)
I then combined 2/3 cups almonds, 1/2 cup of chopped dates, and the dehydrated bananas in the food processor until a mass is formed. Separate the “dough” into 4 equal sized pieces. Place between wax paper and roll with a rolling pin and shape into whatever shape you wish!
Makes 4 bars
Prepping for the week makes me excited for the week to come! I hope tomorrow is a good Monday 🙂
