After unpacking from dog-sitting this past week, it was 6pm and Brain informed me that he was a liiiittle hungry.  I still wasn’t ready for an entire meal after all of the cake that I ate at the bridal show, so I wanted to whip up something really quick and nutritious.  I took a peak in the pantry and the ingredients that stuck out to me were

  • sesame ginger sauce
  • soy sauce
  • ginger
  • garlic salt
  • ground turkey
  • broccoli
  • carrots
  • orange bell pepper
  • onion
  • minute rice
There was a recipe on the back of the minute rice box that I used as inspiration.  I think of recipes as methods where the ingredients are interchangeable.  So, although I had none of the ingredients needed to make the original recipe, I was still able to make a tasty, simple meal!
Sesame Ginger Rice with Ground Turkey and Vegetables

Ingredients:

  • 2 Tbsp sesame ginger sauce
  • 1 Tbsp soy sauce
  • 1/2 lb ground turkey
  • 1/2 cup broccoli
  • 2 medium carrots, chopped
  • 1/2 cup orange bell pepper
  • 1 small onion
  • 1/2 cup water
  • 1 cup minute rice
Preparation:
Brown the meat in a pan until cooked through.  Once cooked, add in the sesame ginger sauce, soy sauce, and vegetables.  Cook for about a minute to bring everything together.  Add the water and bring to a boil.  Once boiling, add the rice.  Cover and reduce heat, simmer for 5 minutes.
Makes 2 servings

Sunday Night Prep

Sunday nights are the night that I use to prepare for the week ahead.  I chop vegetables, freeze bananas, and do whatever I can to make things smooth for the week ahead.

Tonight, I made my first homemade hummus…well kind of my first attempt.  I actually tried to make it at home a couple of years ago with my mom’s blender…and I broke the blender.  I guess that’s why they invented the food processor!

Hummus (original recipe from Oh She Glows)

Ingredients:

  • 2 cups canned chickpeas, liquid reserved and set aside
  • 1 tsp kosher salt, or to taste
  • 2 garlic cloves
  • 1/3 Cup tahini
  • 7-8 tbsp freshly squeezed lemon juice
  • 2 Tbsp reserved chickpea liquid (or water)
  • Sriracha, to taste
  • Olive oil, for drizzling
Preparation:
Put all ingredients in the food processor, accept olive oil and salt.  Whir it together until nearly mixed.  Begin adding the salt to the mixture and continue to mix and taste.  Once combined, put into serving bowl and drizzle with olive oil.  Enjoy!

I then made homemade banana bread “larabars.”  These will be great to have on hand for quick breakfasts or snacks needed in a pinch.  These were so simple to make and tasted just like the real thing.

Homemade Banana Bread “Larabar” (Tarabar!)

I began by dehydrating 2 bananas in the oven at 200 degrees for 2-3 hours (or until dry)

I then combined 2/3 cups almonds, 1/2 cup of chopped dates, and the dehydrated bananas in the food processor until a mass is formed.  Separate the “dough” into 4 equal sized pieces.  Place between wax paper and roll with a rolling pin and shape into whatever shape you wish!

Prepping for the week makes me excited for the week to come!  I hope tomorrow is a good Monday 🙂
