Last year, I started teaching cooking classes in the Indianapolis community. These classes are SO fun! We make a variety of foods that fit within the season of the class and then share a tasty, nutritious meal together…what’s not to love about that!

I’ve made this recipe for shredded chicken for a couple of the classes and the participants always rave about the delicious flavor and how juicy the chicken is…so I decided to finally write down my method to share this really simple way to make shredded chicken.

Slow Cooker Shredded Chicken Tips

  • There is no need to add liquid to the slow cooker, really! Simply put the chicken breast in the slow cooker and let the slow cooker do the work for you.
  • This is naturally gluten free, dairy free, nut free, and low FODMAP making a great make-ahead option for a variety of people.
  • If you are looking to dip your toe in the water of meal prep, this would be a great place to start! I promise you will feel instantly successful after making this meal component.

Description

This simple Slow Cooker Shredded Chicken is a fool proof method for prepping protein ahead of time. I use this chicken in fajitas, on top of salads, in enchiladas, and anywhere else you can think to add shredded chicken!


Ingredients

Chicken breasts (the amount depends on how many you need to use for the week)


Instructions

Place the desired amount of chicken breasts into the slow cooker and cook on low for about 6-8 hours, or until the chicken is at least 165 degrees Fahrenheit.

It should be very tender and juicy, and easy enough to shred with some salad tongs or a fork.

Store in the fridge for 3-4 days or store in the freezer for up to 6 months.
