Since I am done with finals, I have been working on my dietetic internship application and spending some of my time volunteering at The GrowHaus here in Denver. They are having a toy drive this week, so the volunteering experience is definitely putting me in the holiday spirit as we blast Christmas tunes and give toys to many many families 🙂
Last night, I went to see A Christmas Carol with Brian and our friend Kate. I absolutely LOVE going to see live musical and theater performances any time of year, but seeing shows during the holidays makes them extra special. It was definitely a fun treat for a Tuesday night, and I recommend to anyone in the Denver area to check out the show.
Are you ready to hear about this flavorful Slow Cooker Green Chile?
Honestly, prior to making this dish I had never even had green chile (!!), but each week when I make the grocery list I ask Brian for a suggestion or two for meal ideas.
There are weeks where he says “the usual” which basically means “surprise me with whatever is easy”, but there are other weeks where he has very specific requests. I can’t say that I always honor those requests, but I do try my best! The week before Thanksgiving, one of those requests was green chile.
I didn’t even know where to begin, so I did a bit of searching and found a green chile recipe on Paleomg and made some adaptations to make the dish low FODMAP and give it a bit of my flair 🙂
It was SO full of flavor, very comforting, the easiest thing in the world to make, and paired perfectly with Minimalist Baker’s cornbread for two (because sometimes you just need a hunk of cornbread without making an entire batch!)

There are no specific notes about this recipe. All you do is dump all the ingredients in the slow cooker and let it do it’s thang. Easy peasy and perfect for a week night. I hope you enjoy!
Combine all ingredients in a slow cooker, making sure the chicken is covered and all ingredients are mixed together.
Cook in the slow cooker on low for 6-8 hours or high for 3-4 hours.
Before serving, shred the chicken with tongs.
Notes
*Make sure your broth does not contain onion or garlic. FODY Foods makes a good Chicken Soup or Vegetable Soup Base. **Make sure the canned tomatoes do not contain onion or garlic

Made this for dinner tonight. I used pork instead of chicken. Also, I cooked it in my pressure cooker for an hour, then added some rice and pressure cooked it for another 10 min. My husband and I both enjoyed it! Will definitely make again. Was so easy just tossing everything together and letting the pot do the work. BTW- I also used my own homemade low fodmap chicken broth.

I love dump-and-cook slow cooker meals. 🙂 They make cooking and cleaning so simple. Also, I use green chilles all the time as a nacho topping, in salsa, in skillet meals, and a lot in the slow cooker. It adds such a delicious flavor.

I LOVE green chili – the Wynkoop’s green chili was my jam growing up. I haven’t been able to find green chili since moving to Boston, but now I can make my own 🙂 Can’t wait to give this a try!

I made this Chichen Chile in my instant pot (35 minutes on chili setting) and it was great! Wish my diet would’ve allowed me to have another helping.

Yes, cleaning is so easy with this slow cooker meal. You add green chiles to everything…yum!!!
