So, I promised you a recipe on Tuesday and I failed to deliver it yesterday because I was wrapped up in another honeymoon recap!
Never fear, I am here with a tasty side dish that will pair well with fish, chicken, or work well as a salad topping.
After receiving some fresh corn from a member at the gym I work at and wanting to use up some items in my pantry (black beans, quinoa…) I ended up coming up with a fresh, flavorful, easy, versatile and very summery side dish that can be eaten cold or warm.
We have enjoyed this side warm with salmon and roasted veggies.
This quinoa mixture also dressed up my lunch salad so much that I did not even need dressing!
With a variety of textures from the soft quinoa to the crisp corn, and flavors that blend well and don’t overpower one another this quick side dish will be sure to impress. You could honestly eat it as a full meal if you wanted to!

Directions:
While the quinoa is cooking (if it’s not already pre-cooked), chop all of the veggies and combine the rest of my ingredients into a large mixing bowl. Once the quinoa is cooked add to the rest of the ingredients. Stir until thoroughly combined and enjoy!
