I hope you have all had a great morning so far!
Mine started with sunrise yoga on the roof at our new gym…it was a little chilly to start but seeing the mountains in the distance was super cool and totally worth the extra layers.
In other fitness news, I found a fun running group here called Run Denver.
They meet on Monday nights at 6:45pm at a cute little Italian restaurant called DiFranco’s.
Oh yeah, and everyone stays after to enjoy a free beer 🙂 I love it when people combine socializing with being active!
I arrived pretty early on Monday night because I wasn’t sure how things would go and I didn’t want to feel rushed.
Because I was early, I was able to scope out the cute and delicious looking restaurant.
Homemade pasta, pesto, tomato sauce, Italian dressing, and pastries just stared at me in the window.
Apparently, they serve Nutella gelato made in house too…definitely going to have to try that at some point.
When 7pm rolled around, we set out to run on the Cherry Creek Trail for a 3 mile out and back route. At the halfway point, we stopped and did a little work on some stairs, then turned around and headed back to DiFranco’s.
There were 15 people who showed up to run at all different paces and it was so fun! I love running in new places because it’s a great way for me to get “a lay of the land,” and I love running with other people (especially people I have just met!) because I think it’s fun to chat while running.
I had a really great time at the running group, now I just need to get Brian to come with me!!
In other news, last night Brian and I enjoyed a meal with spaghetti squash.
While I LOVE fall squash, I absolutely hate having to cut the squash. I fear for my fingers every. single. time. Honestly, I normally have Brian cut the squash for me.
Anyways, I was home alone yesterday and wasn’t quite sure what to do about the squash. I knew that I COULD cut it if I really had to, but I wanted to see if there was another alternative…and there was!
Cooking the spaghetti squash in the slow cooker!
I used the method from Family Fresh Meals and it couldn’t have been easier. AND it tasted better. There was a deeper, richer, more “buttery” flavor to the squash.
Seriously, if you like to eat spaghetti squash, you have to give Corey’s method a try 🙂

Cutting squash in general is the worst! You know what I do with spaghetti squash to make it easier to cut? I throw it in the microwave for a few minutes so that it becomes tender (but not too hot) before cutting it. Then I usually bake it. I make this spaghetti squash casserole that I haven’t made in awhile — but it’ll definitely be making an appearance when fall hits!
Using the microwave for a little bit sounds like a great way to soften the squash up! Right now, Brian and I are living sans microwave and it’s going great, but that tip sounds great…and so does your casserole!!
I also fear for my fingers every time I cut a spaghetti squash. Definitely trying out this method ASAP!
I love running with people! Were you involved in any running groups in Indy?! I just moved to the area and am struggling to find ways to get involved! Too bad I just missed you! ha 🙂
I was in a running group in Indy! I worked out at NIFS and there was a running group that trained for the Indianapolis Mini Marathon (you should totally be a running group leader in January!) and I met with a group on Saturdays. I’ll send you an e-mail with details 🙂

It sounds interesting to combine meeting people and working out and finally followed by a drink or dinner! I’m wondering if there is anything like that here in Indy! BTW, I should give the way how you cooked the spaghetti squash a try! YUM! 😉

You’re a chatty runner? I love my peace and quiet while running, but still enjoy the company of running with others… Only if they are quiet! Ha. That group sounds like a blast though – beer at the end!!
