Sweet Potatoes: Sweet potatoes contain a good amount of the antioxidant beta carotene, which raises levels of vitamin A in the body. They also contain a high amount of fiber, which may increase fullness, reduce blood sugar spikes, and aid in digestive health.
Extra Virgin Olive Oil: Extra virgin olive oil contains a ton of antioxidants, and monounsaturated fatty acids. Monounsaturated fatty acids are linked with heart health and may help decrease the risk of heart disease.
Thai Sweet Chili Sauce: This is a sweet, slightly tangy sauce made with chili peppers, rice wine vinegar, garlic and a few other ingredients. In my opinion, this sauce pairs perfectly with the sweet potatoes!
How to Make Sweet Potatoes with Thai Sweet Chili Sauce
Start by cutting the sweet potatoes into wedges. Place on a parchment lined baking sheet and toss with olive oil, salt and pepper. Roast the potatoes at 400 degrees Fahrenheit for about 20-25 minutes. Remove the cooked potatoes from the oven and toss with the Thai Sweet Chili Sauce. Then, your sweet potatoes are ready to serve!
Tips for Making Sweet Potatoes with Thai Sweet Chili Sauce
You can cut the sweet potatoes into whatever shape you want, but you may need to adjust the cooking time.
You can use more or less sauce to taste.
This side dish goes with so many things! We love serving it with roasted chicken or fish and a yummy side salad (like my kale caesar salad).
If you are making this for a child under the age of 1, I would refer to this guide for the shape and size of the sweet potato, omit the salt and serve the sauce on the side so you can adjust the amount of sauce served to the young child.

2 medium sweet potatoes
1 tablespoon extra virgin olive oil
¼ teaspoon salt
⅛ teaspoon pepper
2 Tbsp Thai Sweet Chili Sauce
Instructions
Wash and dry the sweet potatoes.
Preheat the oven to 400 degrees Fahrenheit and line a rimmed baking sheet with parchment paper.
Cut the sweet potatoes into wedges. Toss with olive oil, salt and pepper.
Roast the sweet potatoes for about 25 minutes or until crisp on the outside and soft on the inside.
Remove the potatoes from the oven and toss with the Thai Sweet Chili Sauce. Serve and enjoy.
