It makes things so much easier in the morning when there is something prepped and ready to go for breakfast. Some of our recent go-to items are breakfast burritos, hardboiled eggs and fruit, and muffins.
We love muffins in our house. I love experimenting with different muffin recipes and ingredients, and Brian loves eating them 🙂
A few weeks ago, I was asked to partner with Meijer and Metamucil to share the importance of fiber in our daily diets and how easy and tasty it is to get the recommended amount!
When Brian and I lived in Indianapolis, we would shop at Meijer weekly and I am all about getting enough fiber in my diet, so the partnership seemed like a natural fit.
It really is pretty easy to get a good amount of fiber into your diet if you are eating as many fresh fruits and vegetables as you can, but with today’s busy, busy, busy go, go, go lifestyle I understand that sometimes eating healthy and getting fiber into your diet can be a challenge.
I know fiber can help maintain a healthy digestive system, is linked to lower blood cholesterol levels, and may even help regulate blood sugar levels so I really try to get enough fiber into my diet every single day. If I find myself eating less fruits and vegetables than normal, sneaking something like Metamucil into my muffins is the perfect way to get a little fiber boost.
In addition to the Metamucil I used raspberries, chia, and almond meal to boost up the fiber content of these muffins. Brian tried one of these muffins right out of the oven and LOVED it! No extra fiber detected just a tasty, light, buttery and slightly sweet muffin perfect for breakfast or a snack.

I like fiber rich cereals.
I could eat brussels sprouts, broccoli, and apples everyday! 🙂
Somehow, I’ve been eating too MUCH fiber leading up to long runs with this marathon training and trying to cut back! But on normal days, I eat oatmeal with fruit and yogurt with chia seeds and fruit for breakfast. Usually some high-fiber cereal like Mini Wheats as a snack too.
My favorite way is probably beans, black/kidney/northern beans. Great way to get fiber into my family lol.
