September is Fruit & Veggies-More Matters Month, so I am sharing Rainbow Sushi Sandwiches. A fun, colorful, and tasty lunch great for kids and adults that is FILLED with vegetables!
Does anyone else feel like every day is a “National Holiday” and that each month has a theme? It’s hard to keep them all straight, but one that I keep marked on my calendar and that I have no problem remembering is Fruit & Veggies – More Matters month…which is this month!
Building my meals around produce is something that I practice every single day, but I realize that many people need inspiration for new ways to incorporate fruit and veggies into the meals they eat. Since I love experimenting in the kitchen and really playing with food, one of my goals with this blog is to inspire you to get in the kitchen to try new things.
These Rainbow Sushi Sandwiches are a creative and tasty way to enjoy your vegetables at lunch time.
Focusing on eating a ton of different colors at your meals is a great way to make sure you are getting a variety of produce, vitamins, minerals, and antioxidants. All things our bodies need to be their best!
While living in Colorado I nannied a little girl who had a sweet spot for sushi, so I made these adorable Rainbow Sushi Sandwiches with her in mind. (no seafood in this sushi!!)
This is what I included in the Rainbow Sushi Sandwiches:
Whole Grain Bread – can be made gluten free if necessary
Hummus – this is made with chickpeas (high in fiber, plant protein, and B vitamins) and acts as the glue of the sushi. You could use any spread you or your child enjoys here.
Carrots – make sure to grate these so they are easy to roll into the sushi.
Purple Cabbage – adds a nice crunch and sweet flavor, chop this nice and fine as well.
Cucumber – cut these into long skinny strips.
Tomato – cut these into strips or small pieces too.
You could easily sub any vegetables you or your family prefer, these are just the flavors we prefer in my house! If you give this sushi a try, I would LOVE to hear what combination of vegetables and sauce you use 🙂

Ingredients
Scale
4 slices whole grain bread (can be gluten free if necessary)
8 tsp hummus
1/2 carrot, grated (about 2 Tbsp of grated carrot)
2 Tbsp grated or shredded purple cabbage
8 cucumber slices
Instructions
Roll each piece of bread very flat with a rolling pin.
On each slice of bread, spread 2 tsp hummus. Then, top one end of the bread with 1 1/2 tsp of grated carrot and 1 1/2 tsp shredded purple cabbage (1 Tbsp total). Add 2 skinny slices of cucumber and 2 skinny slices of tomato.
Roll the bread very tightly starting with the end that contains the ingredients.
Cut into 4 slices.
serving is 8 slices (2 slices of bread)
Notes
Kids can help flatten the bread by rolling it with the rolling pin.
