Yesterday was such a great start to the week…anyone else feel that way?
I started my morning with an indoor cycling class.
It has been so long since I have been to a cycle class, and I always forget how much I love it! I need to get more cycling back into my life.
Breakfast was a delicious batch of egg white oats with about 2/3 of a melty mashed banana, cherries, and dark chocolate cocoa powder (that’s why they are so black!)
Dinner was a Greek black bean burger from the Lean Green Bean with a side of spaghetti squash and salad.
Apparently, I was really in the mood for onions on my salad…
After dinner I was still hungry and in the mood for something sweet.
I whipped up some plain, nonfat Greek yogurt with dark chocolate cocoa powder and stevia and topped it with a tablespoon of natural peanut butter. Totally. Hit. The. Spot.
Ok, so enough about Monday…let’s rewind back to the weekend!
Friday night was spent “in” celebrating Brian’s November date night.
Last Christmas, nearly one year ago, I gave Brian the gift of 12 prepaid and preplanned date nights. One to complete each month of the year. If you are a new Treble in the Kitchen reader, you can read more details about the Christmas gift by clicking this link.
This date night is was so cozy and relaxing. Perfect for this time of year.
In this envelope, I simply place $20 with a note stating Brian was in charge of dinner and I was in charge of dessert for the evening.
Brian is a huge help in the kitchen, but he is not usually the one cooking the food or creating the menu so I thought this would be a fun way to switch roles.
Brian’s meal pick? Ghouda macaroni and cheese with crab.
We both helped each other out and worked away on our portion of the meal while sipping some prosecco. It was so fun!

The macaroni and cheese was so tasty and rich…we had lots of leftovers, which Brian was NOT mad about 😉
We also had a tasty side salad to round things out.
My dessert was actually Lindsay from the Lean Green Bean’s Sweet Potato Brownies.
I know I know, you are probably all thinking sweet potatoes and brownies do NOT mix, but hear me out! These were very tasty, and you would never know there was no flour or added sugar. The brownies are sweetened with dates, kept moist with the sweet potatoes and they are very easy to make.

We enjoyed our tasty dinner and dessert while watching a movie on the couch. Such a great date night in!
Only one more date night left…I wonder what it will be!

We did! We only just finished it yesterday. I didn’t really eat any leftovers, but Brian was eating them for lunch and dinner! Ha!
