I did something last night that I have been wanting to do for so long.
Brian and I got our dinner from the food bars at Whole Foods!
Brian had his meal from the hot food bar, I got mine from the cold food bar. I built a large salad of romaine, spinach, tofu, roasted edamame, red onion, green onion, roasted garlic, and cucumber. Β It was absolutely delicious and totally worth the arm and the leg that it cost!
I also had a little side of garlic and basil squash and some chili roasted sweet potatoes. Β Yum!!
I had been battling a headache all day, so Brian and I just sat on the couch, watched some TV, and chilled. Β Boy, was that nice!!
A treat of vanilla maple Arctic Zero topped with Love Grown granola was also enjoyed π
We were in bed by 9:30am on a Friday night. Β Call me old and boring, but it sure felt great to get the sleep my body needed!
Today is a pretty special day. Β It isΒ National Banana Bread Day! Β In honor of this American Foodie Holiday π I decided to get creative with my oats this morning to replicate the delicious flavors of banana bread. Β Boy, was I successful!
These oats had a nutty flavor from ground flaxseed, were silky smooth, and very satisfying. Β I can’t wait to make them again π
Banana Bread Oats
Yields: 1 Serving
Ingredients:
Directions:
In a large, microwave safe bowl (too big to eat the oats out of) place the oats and water. Β Microwave on high for 2 minutes. Β Next, add in the egg whites, flax seed, stevia, nut and butter extract, and cinnamon. Β Stir to thoroughly combine. Β Microwave for 2 more minutes. Β Finally, add in the banana and microwave for 1 more minute. Β Pour this mixture into a smaller bowl to serve and top with pecans. Β ENJOY!
I hope you all have a wonderful Saturday and celebrate National Banana Bread Day!

The Whole Foods cafeteria is fantastic but you pay the price. As someone who eats a fair amount I was shocked when my lunch bill was $22!
EEk!! $22 is very pricy….at least it tasted good! π
Chili roasted sweet potatoes?? Hmm…I am thinking that I need to check out the Whole Foods food bar ASAP! I actually cannot believe that I haven’t eaten a meal there before. Clearly I am missing out!
They were as delicious as they sound!! π
