And because it is the season, I have yet another holiday recipe to share with you all!
Of all the cookies and treats that my mom makes each year, I would say that her buckeyes are one of my top two favorites. That is saying a LOT. These are the perfect combination of peanut butter, chocolate, sweet, and nutty. Seriously, if you haven’t tried a buckeye then you don’t know what you are missing out on.
One thing I will say about this recipe, is that every year, literally EVERY year, my mom tells herself to only make a half batch of these puppies because the recipe makes so many. She NEVER makes a half batch and we have buckeyes out the wazoo! (I’m not complaining…). So, this recipe can be easily halved, just in case you don’t want enough buckeyes to last you until next Christmas.
Mom’s Holiday Buckeyes

In a large bowl, mix powder sugar with peanut butter using hands. Then, add the melted butter with hands. (This is where it gets messy!!) Roll into 1 inch balls. Place on waxed paper or Pam sprayed cookie sheet. Place outside or in the fridge/freezer for about an hour–They MUST be cold throughout!
Melt the chocolate slowly and make sure not to get ANY water in it or it will be ruined. In a separate pan, melt the coconut oil slowly. Add the melted coconut oil to the chocolate and mix well. Bring in one tray of the balls at a time and start dipping in the chocolate. I have put the balls on a toothpick to keep the tops from getting in the chocolate and I have used little tongs, do whatever works best for you! Put on a wire rack, or back on the cookie sheet. Return the balls to the cold. When the chocolate is hard and balls are cold, store in a sealed container in the fridge.
