If I’ve said it once, I’ve said it a thousand times…while completing my dietetic internship I am constantly searching for ways to simplify things, and often times that means simple, planned meals.
Prepping items like muffins or overnight oats for easy week day breakfasts, having chopped and roasted veggies to toss into a salad mixture for lunch, and having components of dinner (or the whole thing!) ready to go thanks to the slow cooker have made my life MUCH easier. This Low FODMAP Slow Cooker Salsa Chicken is one of those meal components that makes putting dinner/lunch together a breeze.
Growing up, there were a few go-to meals on our weekly meal plan…one being spaghetti night and the other being Mexican night. My mom would lay out all of the fixings (lettuce, tomatoes, pinto beans, salsa, cheese, onions, tortilla chips, burrito shells, etc) and then we each got to go through the “line” and build our own meals. I LOVED this because I could make nachos, burritos, taco salad, or whatever I felt like at the time.
Our Mexican night was so easy yet delicious that Brian and I find ourselves making a “Mexican” night for dinner each week too!
This slow cooker salsa chicken is DEFINITELY a topping option when we make up our topping bar.
Not only is the chicken absolutely flavorful and juicy, but it is SO easy to prepare. You literally just put the chicken and salsa into the slow cooker and let the slow cooker do it’s magic while you work work work throughout the day.
Not much gets better than that 😉
Put this into quesadillas, place it on top of your favorite vegetables for a taco salad, wrap it in a burrito or taco shell, or make your own “Mexican night” build your own dinner bar.
You could even make this on the weekend and use it throughout the week…totally up to you!
