Yesterday, I told you that one of my favorite things to do for a date night is to cook a tasty meal together that seems somewhat “fancy.” Well, I couldn’t just leave you with one date night meal…so here is another healthier date night option: Baked Cod Parmesan with a delicious dessert of Healthier Chocolate Chip Cookie Sundaes.
Fish is always a great option when trying to lighten things up because it is a low-calorie and low-fat source of essential protein. So, you can gobble up this tasty meal without feeling overly full or stuffed by the end but still feel satisfied that you had a delicious, filling, and healthy meal.

Preheat the oven to 400 degrees.
Spray a glass baking dish with non-stick cooking spray.
In a skillet, combine the tomato paste, oregano, garlic, and rosemary. Cook until the mixture starts to get slightly thicker and is heated through. This will take about 5 minutes, and you will start to smell the delicious seasonings!
Place the cod in the greased baking dish. Top with the tomato sauce once the sauce has been cooked over the stove. Top the sauce with the mozzarella cheese. Sprinkle with the parmesan.
Cook for about 15-20 minutes, or until the cod has reached an internal temperature of 135-140ºF.
Once the fish is thoroughly cooked, place on your favorite plate and serve with your favorite side dish. Brian and I served ours with steamed broccoli 😉

These chocolate chip cookies combine oat flour, and whole wheat pastry flour to provide a healthy dose of grains without taking away any of the classic chocolate chip cookie flavor.
Healthier Chocolate Chip Cookies
Yields: about 10 cookies

Preheat the oven to 350ºF.
In a medium bowl, combine the flours, salt, and baking soda.
In a mixing bowl, combine the coconut oil, egg, sugars, and vanilla. Mix until thoroughly combined.
Once the wet ingredients are combined, gradually add in the dry ingredients. Finally, mix in the chocolate chips.
Place the dough by tablespoon full onto a non-greased cookie/baking sheet and bake for 8-10 minutes, or until a nice golden brown.
Remove from the oven and place on wax paper to cool.
Serve as cookies alone, or make a little sundae out of them!
With this dessert I tried the So Delicious Dairy Free Almond Milk ice cream, and while it didn’t taste exactly like regular dairy ice cream it was still delicious and addicting in it’s own way!
My recommendation for this dessert: Either make it when the cookies are warm, or heat the cookies up in the microwave so that the ice cream gets a little melty and you get that warming and cooling effect. Yum!
