This is a little rewind post back to my pre-race dinner on Friday night. My parents were coming over for dinner, and my mom had given Brian and I a grill earlier in the summer that we had yet to use so I decided on mediterranean turkey burgers as my pre-race fuel.
Guy Food: Mediterranean Turkey Burgers

Once chopped, add the zucchini, red onion, feta cheese, salt, and pepper to the thawed ground turkey in a large bowl.
Mix together with your hands. It’s the only way to get it all mixed! Just be sure to wash them well before and after 😉
Form the meat mixture into four patties and place wax paper between each patty on a plate. When ready to place on the grill, take the wax paper and flip it upside down onto the grill.
Wait for the burgers to cook on one side until they are easy to lift off the grill with a spatula, if the burger sticks then it is not ready to flip.
We also cooked the corn on the grill. When the burgers are done, place them on the sandwich thins and top with desired toppings! Don’t forget the special sauce you made at the beginning 😉
Mom brought us fresh tomatoes and basil. The basil is from a family friend’s basil bush…literally BUSH! I saw a picture and couldn’t believe how big it was when I can’t even get a little sprout to grow!
She also brought Brian and I pots. For the past 5 months I have been cooking everything in a giant skillet!…having a real pot will be nice.
The meal was delicious and super filling, I couldn’t even finish it! But it did give me good race fuel 🙂
