My Favorite Green Smoothie

This is the green smoothie I’ve been living off of all summer long. Full of frozen spinach (key for keeping it creamy and thick), frozen banana, strawberries, almond milk, and a touch of protein powder for a little extra boost this smoothie will satisfy you as your morning meal while tasting as delicious as an icy treat for dessert!

Before we dive into the satisfying Green Smoothie recipe (you better believe it’s my fav!)I want to share the fun event I attended yesterday…the Udi’s Gluten Free Athlete Summit! While I don’t follow a strict 100% gluten free diet, about 95% of the time I do follow a gluten free way of eating because of the type of carbohydrate in wheat (wheat is technically high FODMAP).  Udi’s is a company started locally, and their products are delicious and full of high quality ingredients, so I was excited to accept the invitation!

Throughout the event, we heard stories from inspiring and accomplished athletes Tim O’donnell and Lauren Goss as they shared about how leading a gluten free lifestyle actually helped their sport performance.

We learned about the details of the celiac disease, wheat allergies, and non-celiac gluten sensitivity from Constance, an RDN with Essential Nutrition.

In addition to connecting with other active individuals and people leading a gluten free life, Udi’s also shared some of their delicious and drool-worthy food with us.

The croutons on the kale salad below are made with Udi’s gluten free bread!

Overall, the event was a wonderful networking tool for connecting people who are active and conscious about eating gluten free in addition to sharing new-to-me products and new ways to use Udi’s products in the kitchen.

Now About My Favorite Green Smoothie…

I realize there are practically a billion green smoothies on the internet right now.  I know because I’ve tried them, created my own, experimented with many add-ins, etc.  While I have a special place in my heart for ALL smoothies, THIS is the one that holds the key.  I’ve literally been living off of it and enjoying it for breakfast (in bowl or smoothie form) every day all summer long.

The ingredients in this smoothie are super simple and very affordable.  Frozen strawberries, frozen banana, almond milk, frozen spinach, vanilla extract and your favorite protein powder (any kind will do, or none at all!)

Not only are the ingredients simple, but it takes almost no time to make.

While the protein powder is optional, I personally like to add some in because I think it makes the shake I mean smoothie more creamy and thick…oh yeah, and protein helps repair muscles, hair and nails grow thick and strong, keep you fuller for longer and all that jazz 😉

I make this smoothie as a shake (like pictured) or a bowl with lots of fun toppings like Love Grown Granola, raw oats, nut butter, more berries, or coconut shavings.  When making this into bowl, I simply add a little less liquid so that the toppings can stay on top of the thick smoothie rather than sinking to the bottom.

This recipe is my favorite this summer, and I feel like I can shove just about as much spinach as I want into the smoothie without the taste being affected at all.

I will say, I have not added any sweetener to this smoothie because I think the fruit plus the vanilla extract is absolutely sweet enough.  If you have a sweeter tooth than me (which is very possibly true) simply add one date to the mixture.  You may have to blend a bit longer, but I blend the heck out of my smoothies anyway to make the SUPER creamy.

Ingredients

Scale
  • 1 frozen banana
  • 2 frozen strawberries
  • 1/2 cup frozen spinach
  • 1/2 cup unsweetened almond milk*
  • 1 scoop of your favorite protein powder (I’m currently using an unflavored collagen protein powder, but vanilla would work great too)**
  • 1 tsp vanilla extract

Instructions

  1. Combine all ingredients in a blender and blend taking time to scrape down the sides as necessary until creamy and smooth.
  2. Enjoy!

Notes

*1/2 cup of almond milk makes this smoothie thick and perfect for a bowl. If you want a thinner smoothie for sipping through a straw, add 1/4 to 1/2 cup more almond milk.
