Good morning everyone, and happy Friday!
This week crept along a bit for me, but I am very thankful that I have the weekend right ahead of me.
A couple of days ago, I shared my pumpkin eggnog overnight oats recipe. Because it is “the season” and I absolutely love eggnog, I have kind of been on an eggnog kick. Not just any kind of eggnog, I have been loving the So Delicious Coconut Milk Nog. Now, I feel that some of my die-hard eggnog lovers probably just curled their noses, but don’t knock until you try it! This stuff really does have that delicious eggnog flavor and has the same consistency as full fat dairy eggnog.
Because I am loving this nog so much, I started to get creative and think about ways to utilize the tasty drink in recipes. Here, my friends, is a delicious morning beverage that Brian, the non-eggnog lover, guzzled down!
Eggnog Iced Coffee:
Ingredients:
Step one:
Fill your large cup full of ice cubes.
Step two:
In a small bowl, combine 1 tsp of instant coffee with 1 packet of stevia. Add in 2 Tbsp of warm water. Mix until combined.
Step three:
Pour the coffee “syrup” over the ice cubes. Then, pour 1/3 cup eggnog and 1/3 cup unsweetened almond milk over the cubes .
Step four:
Stir and enjoy!

This weekend I have big plans to get a lot of Christmas shopping, crafting, and baking completed, however, there is one thing on my list to complete that does not have to do with Christmas and winter.
Addressing our save the dates!
I picked them up last Friday, and I am so pleased with the finished product. I designed the way that I wanted the save the dates to look by drawing little pictures to give a rough sketch of what I was looking for. My mom then took the pictures I drew and created the final masterpiece. Thanks mom for making the save the dates perfect!
