About a year ago, my Mom purchased me a GIANT container of homemade granola at a spring family auction that my sorority held. To this day, I can honestly say that is my favorite granola, yet I never got the recipe for it!
The spring time weather has had me thinking about this sweet, crisp, nutty granola so I thought that I would attempt to make my own version. With Brian as my official taste tester, I think we both agree that this recipe for granola truly hits the spot. The crispness is just right, the citrus gives a great contrast to the spicy cinnamon and sweet cranberries, and it is great plain or on top of plain Greek yogurt with honey (that is Brian’s favorite way to enjoy it!)
Not only does this granola taste delicious, but it is rich in healthy fats like omega 3’s and 6’s, B Vitamins, Vitamin E, and Fiber 🙂
I hope you enjoy the recipe!
Cranberry Citrus Hemp Granola
Cook Time: 20-25 Minutes
Ingredients:
Directions:
Preheat oven to 300 degrees.
In a large bowl, combine oats, wheat germ, hemp seed, flax seed, cinnamon, and almonds.
In a separate bowl, combine brown sugar, honey, orange and lemon juice and zest, and vanilla. Melt in the microwave for about 30 seconds. Combine mixture and pour over the top of the dry ingredients. Mix until completely combined.
Spread on a baking sheet in an even layer. Place in the oven. Remove from oven and stir every 8 minutes for about 25 min.
Once the granola is evenly browned, place in a large bowl and toss with the cranberries. Place on wax paper to cool and harden.
Enjoy!!
