Good morning!
Thank you for all of the kind comments and thank you for reading the posts about my honeymoon with Brian. I truly enjoyed reliving each day of our dream vacation as I typed out the details describing each day. Now, onto some regularly scheduled programming 😉
Yesterday, I was running LATE! Monday mornings, I normally get to the gym to do some sort of cardio work and attend a CXWORX class…but yesterday I arrived after class had started, so I did this quick 30 minute elliptical interval workout.
When working out on a cardio machine, it is a MUST for me to do some sort of interval work. I find that when going for minute after minute at the same pace whether it be on the elliptical, treadmill, bike, or whatever I get so BORED! It’s important for me to truly enjoy exercising, so being bored is never a good thing.
Completing interval workouts that have me changing the incline and/or pace every couple of minutes are perfect and take my mind off of what I am actually doing.
Although I was running late yesterday morning, I still had a great day at work. Sometimes running late can totally throw my whole mojo off for the day, but thankfully that was not the case for me yesterday.
In the afternoon, I actually got to leave the gym to work on a fun project!
The project involves healthy food trucks. Don’t worry…I’ll share more details later!!
Last night’s dinner was a complete kitchen experiment. I chopped everything up and threw it into the skillet while Brian stirred away. We were both anxious and excited to see how this experiment would turn out…
It looked like fried rice….
But it was actually cauliflower! AND it tasted amazing. I can tolerate a lot of weird foods, but Brian gave this dish his seal of approval. I promise you, it tastes as good as it looks.
I followed this recipe from Corey at Family Fresh Meals. Thanks for the great meal idea! This will definitely hop into the regular rotation.
After dinner, I had a little hankering for something sweet so I helped myself to a little homemade trail mix with dried pineapple, raisins, almonds, and sunflower seeds…hit the spot!

I JUST read about someone using their cauliflower as rice! It sounded great; now I definitely have to try it!

I have been wanting to use cauliflower as a mashed potato substitute. I never thought to use it as “fried rice.” Great idea!
