Avocado Oil Balsamic Vinaigrette is a super simple make-ahead recipe that you can have on hand for salads and marinades all week long, and the best part is that it only takes 5 minutes to make!

Today is the longest day of the year and one of my absolute most favorite days of the year. Â I LOVE summer, and this day brings it!
While summer is just officially starting, Brian and I have been enjoying tons of fun summery things like lunches outside with the pups at Public Greens, long family walks, grilling, and a family baseball game to celebrate Father’s Day.
Tonight, we are celebrating the summer solstice with Monumental Yoga in Downtown Indianapolis. Â We attended this event a few times while living in Indianapolis PRE-Denver, and we are excited to participate now that we are in Indy again.
Because the weather is sunny and warm, I just crave cooling foods like thick smoothie bowls (with all the toppings), crisp salads, and grilled everything. Â Do you crave those foods too?!
While I often will just toss together a little oil and vinegar for my salad dressing, this time of year I really like to make a big batch of a delish dressing on the weekends to enjoy during the week because salads almost always have a place on our menu.
We also use these types of dressings to marinate chicken or vegetables to put on the grill. Â The simple dressing imparts SO much flavor and pulls together a delicious summer meal.
I love this Avocado Oil Balsamic Vinaigrette because it is very easy, requires minimal ingredients, and has a slightly earthy flavor thanks to the avocado oil. Â Yum!
Really, you just mix the ingredients together in your favorite resealable container, give it a shake and you are good to go. Within 5-minutes you have an amazing salad dressing made. Oh! And I should mention that the flavors meld together so well and continue to get better throughout the week 🙂
For those with dietary concerns – this dressing is low FODMAP, gluten free, sugar free, dairy free, vegan (I think MOST people can enjoy it!). Â Balsamic vinegar is low FODMAP in a 1 Tbsp serving according to the Monash University app, so enjoying 1 Tbsp of this dressing would give you 1/2 Tbsp or 2 Tbsp of the dressing will give you 1 Tbsp.

Ingredients
Scale
1/2 cup avocado oil
1/2 cup balsamic vinegar
2 tsp dijon mustard
1/2 tsp black pepper
1/4 tsp sea salt
Instructions
Combine all ingredients in a sealable container.
Seal the container, shake until thoroughly combined.
Store in the refrigerator until use.
Notes
*Balsamic vinegar is low FODMAP in a 1 Tbsp serving according to the Monash University app, so enjoying 1 Tbsp of this dressing would give you 1/2 Tbsp or 2 Tbsp of the dressing will give you 1 Tbsp.
I have just bought some avocado oil and was wanting a dressing for my salad. I thought hmmm does balsamic go with the oil and found your recipe, delish!
There is no oil on the market that you can bring it up to 400 degrees. Try grilling a filet of atlantic salmon blackened with the skin on. Loaded with omega 3! If you care try the balsamic avacado dressing on top! As we say in Boston, pissa! lol!
I love summer too! I guess I “celebrated” the solstice with a tough bike ride, which ended in a hail storm. I’ve also really been craving salads. It’s really nice to have a few low-FODMAP salad dressing recipes on hand.
I just recently started getting into avocado oil! This is a great way to use it as a dressing! Never would have thought! I’ve just been using it to coat some veggies when I cook it.

With this ratio of vinegar to oil, I think the vinegar is too forward. I’d use less vinegar.

Refined avocado oil can reach a 500-degree smoke point.
