Brian and I have yet to do a complete grocery haul, so our meals are going to be a little bit “creative” this week.
After a quick 2.5 mile run with Brian last night, we were both stumped in the dinner department…but we were also pretty hungry!
I took a peak in our freezer and fridge and I saw that we had shrimp, frozen artichokes, and cauliflower among other things. For some reason, these three ingredients stood out to me. I have never really cooked artichoke aside from spinach artichoke dip, placing it on pizza, or putting marinated artichokes in my salad. So, this was quite the experiment!
I tossed the ingredients in a curry spice mixture that my aunt made for me. I placed half of the artichoke on a baking sheet with the cauliflower and roasted the artichoke and cauliflower together at 400 degrees for 20 minutes.
I then cooked the shrimp in coconut oil on the stove along with the other half of the artichoke, just to see if I would prefer the artichoke baked or sauteed.
The meal turned out absolutely delicious!
Curry is a favorite flavor for both Brian and myself, so you usually can’t go wrong if there is a little curry in the mix. Brian and I liked the artichoke both ways..so there was no winner there! I had planned on having leftovers for lunches later in the week, but Brian enjoyed it so much that he ate all the leftovers. I guess it really WAS tasty 😉

Here (where I am now) in Poland – they have an amazing artichoke salad, where it is stuffed artichokes (stuffed with salmon paste) then served over bean sprouts and lettuce – sounds strange but it is good!

I’ve actually never had artichoke before, unless you count spinach and artichoke dip from restaurants, Ha Ha!
