A Year Ago Today…Homecoming

A year ago today, I was preparing to fly across the world to work on board a cruise ship as the Fitness Director.

I honestly have to say that this has been the fastest year ever.  I have had so many experiences, have traveled to London, Japan, Thailand, Australia, New Zealand, Korea, Hong Kong and back again.  I have had a job where I am teaching more fitness classes than my body can handle, and I have had a job where I try to squeeze physical activity into every spare second that I get (which is rare).

This year has meant a lot of growing up for me.

I am so happy with the experiences I have been able to go through, and with everything that I have learned about life, fitness, health, and myself.  After seeing how far one year can take me, I can’t wait to see where I go this coming year!

Homecoming

This year, I will not be flying to far off lands (at least not anytime soon! 😉 ) but I will be heading to my first Butler University Homecoming as an alumni.  I can’t wait!

Because I can’t go anywhere without bringing some sort of snack to nosh on, I made up a quick little blue and white treat last night to celebrate the Bulldogs and my first ever alumni event.

A couple of months ago, Courtney from Sweet Tooth Sweet Life  guest posted some sweet summer snacks on the blog.  One of those delicious snacks were chocolate covered peanut butter pretzel sandwiches.  I remembered her posting these little treats as I was driving home from work yesterday racking my brain for treat ideas that I could take to our Butler Homecoming.  I didn’t follow her recipe, but used her idea as inspiration.  These little treats turned out sooo cute and sooo addicting.  The perfect combo of sweet and salty.

Chocolate Covered Peanut Butter Pretzel 

Ingredients:

  • 1 lb bag of pretzels
  • 2 cups peanut butter
  • 1 cup powdered sugar
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1 tsp coconut oil
  • 1 12oz bag of white chocolate chips
  • sprinkles if desired
Directions:
Combine peanut butter, powdered sugar, brown sugar, cinnamon, and vanilla extract in a large mixer bowl.  Mix until thoroughly combined and smooth.  Once combined, spread onto one pretzel with a knife and place one pretzel on top of the other making a little sandwich.  After all of the sandwiches are made, combine the white chocolate and the coconut oil.  Slowly melt the two together in the microwave by heating for 45 seconds, then stirring until the mixture is smooth and creamy.  Once the chocolate and coconut oil are melted, dip the pretzel sandwiches into the chocolate.  Place on wax paper or in little muffin liners to allow them to harden.  Sprinkle with decorations if desired 😉

  1. A year ago today I headed down to Miami beach with my friend for a weekend at the fountainbleau for my birthday. A lot does change in a year! Enjoy your homecoming weekend – my first homecoming weekend at UF last year was one of my favorite experiences ever!
