- 1/2 cup canned pumpkin puree
- 1/2 cup peanut butter
- 1 medium ripe banana, mashed
- 1/2 cup old-fashioned oats
- 1 egg
- 1 Tbsp honey (or maple syrup)
- 1 tsp vanilla extract
- 1/4 cup chocolate chips (can substitute chopped dried fruit like cranberries or dates)
Instructions
- Preheat oven to 375 degrees Fahrenheit.
- In a large mixing bowl, combine all of the ingredients and mix well. Spoon the batter into a greased mini muffin tin.
- Bake in the oven for 20 minutes until cooked through. Cool and serve (the bites can also be frozen).
