Happy Monday!
My weekend was spent with a stack of books. This upcoming weekend, I will be attending AFAA’s Primary Group Fitness Certification Workshop, and I needed to hit the books hard before the actual workshop arrived.
After teaching my Saturday Bodypump class, I stopped into one of my favorite local coffee shops, Mo’joe Coffeehouse, for a cup of coffee, internet, and a nice large table for studying. Thankfully, all three of those needs were satisfied.
I studied hard until I was hungry for dinner.
Before heading home, I made a pit stop into Blue Mile, a running store, to purchase my very first pair of cold weather running tights. This week, I begin my half marathon training program for the Indianapolis Mini Marathon and I needed something to keep my legs warm while we run outside. Recently, it has been very cold in Indianapolis and I know that my legs get cold very easily, so I knew that I needed something to solve my problem.
The Blue Mile employees were very helpful when suggesting different brands and fits of running tights. I ended up choosing a pair of Mizuno tights that have a compression feature in the upper thigh portion and have a nice little zipper on the bottom.
The person who helped me at the running store mentioned that the zipper on the bottom was a nice feature in the off chance that I may get a little heated during my run. He recommended simply unzipping the bottom portion of the pant to get a cool breeze flowing to cool down if necessary. What a great tip!
After my shopping errand, I came home for a dinner of random refrigerator leftovers and some roasted veggies. This batch was particularly tasty. I was inspired by Averie of Averie Cooks and roasted my veggies in coconut oil with fresh rosemary. I also added in a touch of garlic salt. Boy, were these good! I don’t know why I never roasted in the coconut oil before, but I am never going to do it without it 😉
After my random dinner, I was in the mood for a little dessert. At my last visit to Whole Foods, I picked up a pint of Arctic Zero. I was shopping around for a healthy ice cream alternative, and this one caught my eye. There are only 150 calories in the entire pint! I had about half of the container last night topped with some melty peanut butter and granola, and it was gooooood. It definitely hit that sweet spot and conquered my craving for a decadent dessert. I think I may have to purchase those frozen treats more often.
All in all it was a productive weekend.

I keep hearing how good veggies are roasted in coconut oil. I need to try it out for myself, asap!

I’ve seen Artic Zero in the store, but never in the mood for ice cream when I want to give it a try. I think I need to pick it up next time! Topping it with PB is a good idea!
It is sooo good! Definitely not the same as ice cream, but a great alternative to kill that ice cream craving 🙂
