Description

This Edamame Black Bean Salad is a super flavorful, easy way to enjoy highly nutritious soy.


Ingredients

Scale

1 can black beans, drained and rinsed

1 cup thawed and shelled edamame

1 cup frozen corn, thawed

1 cup cherry tomatoes, quartered

½ bell pepper, diced

4 green onions, chopped 

2 tablespoons chives, chopped

1 tablespoon extra virgin olive oil

2 tablespoons lime juice

½ teaspoon salt

½ teaspoon chili powder

½ teaspoon cumin

¼ teaspoon smoked paprika


Instructions

Combine all ingredients in a large bowl and stir.

Serve on its own as a salad or cold with tortilla chips.

You can prep this recipe one or two days in advance and store in the fridge in a sealed container.
